Get my drift? 
It depends on the niche. And don't make all of your sites the same article length and same number of articles; it's a pattern and Google is great and detecting them when it comes to penalizing sites.
MSN actually released a paper where they determined that sites with approximately the same number of words on most pages across a site were primarily spam results.
ie. don't look for hard and fast rules, there aren't any

More articles with more specific keywords is better.
Once you publish the articles on your website, there is no sense in deleting them, as they get some good PR and traffic to your site.
