There are a few things to consider when joining an affiliate program. First, you have to think whether it will be a popular selling item. Ask yourself, "Would I want to buy this?," "Would run out the door to buy it?" If you wouldn't want to buy it, you won't have much luck selling it.
Next you have to consider commissions. There are to things to consider. First, what percentage of the sales does the company offer? You want to get the highest percentage you can. Many offer 50% of the sale.
You also want to consider how much money you're making. 10% of a $100 sale would make you more money than 60% of a $5 product.
One last thing you should consider is do they offer you support? Do they supply banners, classified ads, one on one support? How fast do they answer e-mails...

You didn't mention whether you're going to be promoting marketing products.
At www.CJ.com you can search for the most profitable affiliate programs in each keyword niche so this is a great place to start. You'll have to join the CJ affiliate network to get access.
For regular 'widget' affiliate programs search (in Google) for good merchants then check to see if they have affiliate programs you can join.
If your looking at joining a big program you can check to see if there are forums for affiliates to get together. This is a good way to determine if a program is well supported.
Even post in general affiliate forums about the program and see if anyone there has any experience.
You can also email the affiliate manager with a good question and see if you get a response. An active affiliate manager is a good sign of a serious affiliate program that wants to make money.
By far the most important aspect for me when selecting the right niche affiliate program is the merchant's web site. Do they have a wide range of products? Does the site look good? Are their prices good value? Is it easy to buy because the site is well designed?
