Ok, done a lot of research and so far the best hosting providers seem to be:

-Hostgator
-Hostmonster
-Bluehost
-Midphase

Which one of these do you recommend for small niche sites...?

I personally recommend Host Monster.
I used to use Bluehost, but they started having problems with China blocking them.
The problems are gone now, but I'm sticking with Host Monster either way.
The people and machinery are all the same.
I've been quite happy with them over the last 3 years.

They also allow unlimited domains which I like... 5 websites, 1 package.

They all work, they all have short comings, Depends on the other users who are on the server you are assigned. Shared hosting has plenty of problems.

Of those listed Hostgator is most aggressively marketed. I'd consider choosing a short term plan, not investing in too many scripted sites, and seeing how you like them, and their administrative tools.

Host gator can be a problem in hurricane season.

When you are ready find a good reseller account.

Ironically, I have (or had) accounts at three of the four! I'll have to add my vote to Hostmonster, I've been happiest there.

The service has been quite good - the speed is certainly reasonable, and I've had the fewest problems there.

I was first drawn to Hostmonster by their policy of allowing you as many websites as you want on the same package - more and more hosting allows this, but Hostmonster has been doing it for a long time now.

I used to have had MidPphase. I like the support it provided, very prompt and handled in a professional manner except at the time its price was higher than the others.

Now I am using HostMonster. I am pretty happy with its service and support although having a minor issue with Awstats inside the cPanel.

I have been using Bluehost for a few years. I don't have much experience with other hosting companies. I am pleased with Bluehost and I have multiple domains on one hosting package.

I prefer Hostgator. One of the reasons I like them so much is that they offer montly billing - some of the other hosting companies either make you pre-pay for a year, or they make you pay a one time fee of about $30 to get monthly billing. Hostgator also has outstanding tech support, and with a Baby Hosting Plan, you can host unlimited domains for under $10 a month.
