Maybe this is a dumb question...
When I set up AdSense with SBI can I make sure a new window opens when a visitor clicks a Google ad?
Or are they going to leave my site by clicking one?

I think Eric meant ... hacking the code to KEEP them from leaving ... is against the EULA (Terms of Service)...
and he is right.

Yep, visitors clicking on AdSense ads will leave your site and there's nothing you can do about it without violating the Terms of Service.
It's a pain, but think of it this way: You're being paid for people leaving your site. The more people that leave, the more money you make!

For each page you have to decide whether Adsense is the best deal or not.
There are certain sorts of pages where it's almost certainly best not to include Adsense - ezine sign up or product sales page spring to mind.

As an expansion on Charlie's mention of ezine signup pages ... any page with a form as the focus is not allowed to display Adsense anyway, it's a violation of the TOS.
