A sitemap can be 1 of 2 things.
1. A page on your site like the index or contents page in a book with a link to all the pages on your site. Some search engine bots look for a link to a toc.html page on your home page and index all the links from the toc.
Here is an example from my site
http://loans365.net/toc.htm
2. An XML file containing an entry for all the pages on your website. You can register the sitemap.xml file with Google and they will use this to direct the bots to the pages on your site. I would assume other engines will start to use this method over time.
